Creamy Chicken Quesadilla - 250 Calories

This creamy, tasty quesadilla will satisfy your craving for a savory, cheesy snack or small meal...without all the calories! Often, on the weekends, my husband and I eat a lot of small meals. Not always healthy because it's the weekend! However, I've been trying to make the meals and snacks healthier even on the weekends so I don't wake up Monday feeling bad. This quesadilla is so easy to make. Check it out!

What you will need:
4 Corn tortillas (Corn is lower calorie and a little better for your belly)
1 Cup chopped chicken (I always have chicken prepared in the fridge)
2 Tbsp Greek, nonfat, plain yogurt
1 Cup black beans
1/2 tsp onion salt
1/2 tsp chili powder
Garnish:
Your favorite salsa and some slaw (or shredded cabbage) tossed in a low calorie italian dressing (I LOVE "Good Seasons"

250 Calories per Serving - Serves 2


Preheat your oven to 375 degrees. Combine the chicken, yogurt, beans, onion salt and chili powder in a bowl. Stir to mix.


Split your mixture between two corn tortillas and top with the other two tortillas. I don't suggest spraying your cookie sheet with spray because it only makes corn tortillas soggy unless you're cooking for a longer amount of time. 

Place another cookie sheet on top of the quesadillas and pop in the oven for 5 minutes. This prevents the edges of the tortilla from curling up. When you take them out of the oven let them sit for another couple of minutes or the edges will curl right up if you take the top cookie sheet off too soon. 


Serve with your garnish and enjoy!
